Bikini Recipe

Yields 10 people

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place all the components into a pot, heat until it reaches a light boil, mixing so the sugar melts. Next, take off the burner and leave to reach room temperature completely. Transfer into an sealable bottle, close it and store in the fridge, where it will keep for up to one month.

Preparing the Cocktail Base: Combine all the liquids into a big jug, allow it to infuse for one hour, then pass it through preferably using a fine cloth, so it's completely strained.

For serving: Add 85ml of your batch mix into a stirring glass filled with ice, and stir gently for a minute until cold. Strain to a cold coupe glass or similar, garnish with a few cranberries and finish with a light spray of mandarin oil over the top.
